Ingredients:

  • 1/4 cup sugar (adjust according to taste)
  • 1/4 cup falooda sev (vermicelli)
  • 2 tablespoons sabja seeds (basil seeds)
  • 1/4 cup chopped assorted nuts (pistachios, almonds, cashews)
  • 1/2 cup cooked and chilled falooda noodles
  • 2 scoops of vanilla ice cream
  • Rose syrup or Rooh Afza (to taste)
  • Optional toppings: chopped fruits like mango, strawberry, or banana

Instructions:

  1. Soak the sabja seeds in water for about 15-20 minutes until they swell up. Drain and set aside.
  2. Cook the falooda sev (vermicelli) according to package instructions until it's soft but not mushy. Drain, rinse with cold water, and set aside.
  3. In a saucepan, heat the milk over medium heat. Add sugar and stir until it dissolves completely. Once the milk comes to a gentle boil, turn off the heat and let it cool down.
  4. Once the milk has cooled, chill it in the refrigerator until ready to use.
  5. To assemble the falooda, take serving glasses. Add a tablespoon of soaked sabja seeds to each glass.
  6. Then add a tablespoon of cooked falooda noodles to each glass.
  7. Pour the chilled milk over the noodles and seeds, filling about 3/4 of the glass.
  8. Drizzle rose syrup or Rooh Afza over the milk according to taste.
  9. Add a scoop of vanilla ice cream to each glass.
  10. Garnish with chopped nuts and any optional toppings you like.
  11. Serve immediately with a long spoon and a straw.
