Ingredients For the Chicken Marinade:

  • 1 kg chicken (bone-in, cut into medium pieces)
  • 1 tsp ginger paste
  • 1 tsp garlic paste

  • 1/2 tsp turmeric powder

 

 

  •  For the Curry:
       
  •  2 medium onions, finely sliced
  •  1 cup pumpkin (kaddu), boiled peeled and cubed (optional for traditional korma,      but included for "kaddu" variation)
  •   1/4 cup vegetable oil or ghee
  •  1 tsp garam masala
  •   4-5 green cardamom pods
  •   2-3 cloves
  •   1 cinnamon stick
  •   1 bay leaf
  •   1 tsp coriander powder
  •   1/2 tsp cumin powder
  •   1/2 tsp black pepper powder
  •    2-3 green chilies, slit (optional, for heat)
  •    1/2 cup water or chicken stock
  •    Fresh cilantro, chopped (for garnish)
      

 Equipment
- Majestic Chef nonstick shallow pan (preferably 26-28 cm for ample space)
- Wooden/Silicone spoon or spatula
- Blender (for nut paste)
- Mixing bowl (for marinating)

 Instructions: 

1. Marinate the Chicken: 
   - In a mixing bowl, combine chicken pieces with yogurt, ginger paste, garlic paste, salt, red chili powder, and turmeric powder.
   - Mix well to coat the chicken evenly. Cover and refrigerate for at least 30 minutes (or up to 2 hours for better flavor). 

2. Prepare the Ingredients:
   - If using pumpkin, peel and cut it into 1-inch cubes. Set aside.
   - Slice onions thinly for caramelization.

9. Garnish and Serve:
   - Remove the pan from heat. Discard the bay leaf and cinnamon stick (optional).
